Valencia almonds have a sharper, more typical almond shape. Valencia almonds are rich in polyunsaturated fats and were originally cultivated for pressing into almond oil. The texture is not as creamy and tends toward crispness. The flavor is slightly less sweet than Marcona and more nutty. Perfect as a snack, but also as a topping for salads and vegetable dishes. Of course, Valencia almonds with or without shell are a delicious addition to a tapas platter and as a cheese accompaniment.
